Ingredients (Serves 2)

  • 2 cups (500 ml) water
  • 2 Earl Grey tea bags (or an equivalent amount of tea leaves)
  • 2 cups (500 ml) milk
  • 2 tablespoons brown sugar (adjust to taste)
  • A dash of vanilla extract


  1. Bring water to a boil in a saucepan and remove from heat.
  2. Add the Earl Grey tea bags to the hot water and steep for 3-5 minutes, depending on your preferred strength.
  3. Remove the tea bags and add milk to the saucepan.

  • 2 cups (400 g) brown sugar

Directions For Brown Sugar Syrup and Tapioca Pearls

  1. In a small saucepan, combine the brown sugar and 2 cups (500 ml) of water.
  2. Place the saucepan over medium heat and stir the mixture until the sugar has completely dissolved.
  3. Once the sugar has dissolved, bring the mixture to a gentle boil.
  4. Reduce the heat to low and add in the prepared tapioca pearls.
  5. Let the syrup simmer for about 5 minutes, stirring occasionally.
  6. Remove the saucepan from the heat and allow it to cool. Set aside.
